Josh’s Jungle Hot Pumpkin Seed recipe:
1/2 tsp Josh’s Habanero Salt
1/2 tsp garlic powder
1 cup of cleaned pumpkin seeds
1tbsp olive oil or oil of your choice.
mix together in a bowl and spread on parchment on a cookie sheet
Preheat oven to 300, place pan in oven, mix at 10 minutes and 20 minutes. Watch and taste test at 5 minute intervals after that. You want to see the garlic get golden, but not black. The shells should be light golden color and crunchy. It should be done in between 25 and 35 minutes depending on how wet your seeds are.
Tips on cleaning pumpkin seeds:
Pick large chunks of pumpkin off of the seeds as best as you can, then place them in a pool of water and mix around. The seeds should float and the pumpkin chunks should sink. Use a strainer to pull out the seeds, rinse them off and place them on paper towels to dry.
This recipe will work with moist seeds, we placed damp seeds in the oven while it heated and followed the same procedure with success. Dry seeds might have more consistent results though.
Want it even spicier?? Use our Ghost or Carolina Reaper salt instead.
